Wow – what a showstopper! Last night I had the pleasure of dining at Bryn Williams at Theatr Clwyd, and what an experience it was. Before enjoying an evening at the theatre, we sat down for a pre-show meal that, quite frankly, stole the show before the curtain had even gone up.
Starters that Set the Tone
We began with ham hock terrine, toasted sourdough, prune purée and pickles – beautifully presented and absolutely divine. The balance of flavours was spot on. Alongside it, the warm butternut squash, vegan feta and sage offered a perfect autumnal touch – comforting, colourful and full of flavour.
The Showstopper
For the main course, we couldn’t resist Bryn’s pedigree Welsh Black beef and mushroom pie for two, served with Koffmann chips and seasonal vegetables. The presentation was elegant, and the taste and texture were simply sublime – rich, hearty and perfectly executed.
Sweet Finale
Tempted by the dessert menu (and who wouldn’t be?), I finished with a Welsh and French cheeseboard featuring pear chutney, bara brith and crackers. It was the perfect finale – a wonderful combination of flavour and texture, with the bara brith adding a delicious Welsh twist.
Service, Wine & Ambience
The house red paired beautifully with each course, and the service throughout was engaging, attentive and genuinely warm. The restaurant itself feels relaxed and welcoming – ideal for both pre-theatre dining and a leisurely meal at any time of day.
It’s easy to see why Bryn Williams’ newest restaurant will become a firm favourite in North Wales. Whether you’re calling in for breakfast, lunch or dinner, it’s well worth the visit.

When booking, ask for a window table – the views make the experience even more special.
